Buffalo Chicken Dip Recipe

Caution:  This dip is addicting!

Prep Time: 30 minutes

Ingredients:

  • 1 8 ounce package of cream cheese, softened
  • 1 lb boneless chicken breast, cooked and cut into bite size pieces
  • ½ cup hot sauce
  • ½ cup blue cheese salad dressing
  • 1 cup shredded cheddar cheese
  • Tortilla chips

Directions

1.  Spread cream cheese into an ungreased 1 quart baking dish. 

 

2.  Layer with chicken, hot sauce and blue cheese dressing. 

 3.  Sprinkle with cheese.

4.  Bake, uncovered at 350 degrees for 20-25 minutes or until cheese is melted. 

5.  Serve with tortilla chips.

Makes 16 servings

I have shared this recipe before (you can click here to see the original post) but I decided to change it up a bit for Valentine’s Day.

 

One- Eyed Sailors

Ingredients: 1 slice bread, 1 egg, Grated Cheddar Cheese and Non-stick cooking spray

First, using a heart shaped cookie cutter, cut a hole in the center of each slice of bread.  Reserve the cut out circle for later use. 

Next spray your frying pan with nonstick cooking spray.

Place bread with middle cut out in the frying pan and crack an egg into the middle.

Cook for 3 or 4 minutes until the egg gets a bit firm. At the same time cook the hearts. 

Gently flip over the bread with the egg in it.  Try not to break the yoke.   Flip over the hearts also.

 

Cook on the other side for 1 or 2 minutes. 

Add a bit of grated cheddar cheese to the top.

Put the hearts on top. 

Eat and enjoy!

Valentine’s Day Chex Mix Recipe

 Ingredients

  • 9 cups Rice or Honey Nut Chex Cereal
  • 1 cup white baking chips
  • ½ cup peanut butter
  • ¼  cup margarine
  • ¾ cup powdered sugar
  • ½  cup red, white and pink m&ms
  • ¼ cup red or pink sprinkles

 

Directions

Place cereal in a large bowl.  In a small microwavable bowl microwave baking chips, peanut butter, and margarine on high for 1 minute, stirring every 30 seconds, until melted and smooth.  Pour peanut butter mixture over cereal and stir until evenly coated.

Place half of the cereal mixture into a one gallon food storage bag.  Add powdered sugar.  Seal and bag and shake until well coated.  Spread on foil to cool, about 15 minutes. 

 

Meanwhile, stir m&ms and sprinkles into the remaining cereal mixture.  Spread on foil to cool, about 15 minutes.

 

Combine both mixtures in a serving bowl.  Store in an airtight container.

Heart Shaped Pancakes Recipe

Estimated Times

Preparation Time: 10 mins
Cooking Time: 5 mins

Servings: 8 pancakes

Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • ¾ teaspoon salt
  • 1 tablespoon white sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons butter, melted
  • ½ cup mini chocolate chips
  • Powdered sugar

Directions

1.  In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.  Stir in mini chocolate chips.

2.  Heat a lightly oiled griddle or frying pan over medium high heat.  Brush the inside of heart shaped cookie cutters with oil, place on griddle.  Pour about ¼ cup batter into the cookie cutter. 

3.  Cook until bubbles begin to burst. Remove cookie cutters. Turn; continue to cook about 1 minute longer or until golden.

4.  Sprinkle with powdered sugar before serving.

Cooking a whole chicken in a crock pot is really easy. 

1.)    Remove the bag of giblets and rinse off the chicken.

2.)    Spray the crock pot with non-stick cooking spray and place the chicken inside.

3.)    There is no need to add any liquid  – the chicken will make its own juices.

4.)    Sprinkle whatever spices you like onto the chicken such as garlic, onion powder, paprika, salt, pepper, cayenne pepper, etc. 

5.)    Put the lid on the crock pot and set on low.

6.)    Walk away and let cook for about 7 hours.

7.)    In about 7 hours your chicken will be all ready.

8.)    Remove the chicken from  the crock pot and serve.

9.)    If you do not want to use the chicken the same day, you can remove the meat from the bones to use later in a casserole, or to make chicken salad.

Time Out Tuesday at Reasons to Skip the Housework

When you’re in a rush, it’s very convenient to drive through McDonald’s and pick up an Egg McMuffin.  However, it’s real easy to make your own at home.  If you make them up ahead of time, as I did, then all you need to do in the morning is take it out of the freezer and heat it up.  You don’t have to leave the house and drive to McDonalds and wait in line.  Plus, this will save you money!  Also, it’s healthier!

 

Ingredients:

Bread – Of course Egg McMuffins are made with English Muffins.  But why not change it up a bit and use rolls or croissants.  I made some of mine on English Muffins and some on croissants, for variety.  Also, instead of white, why not make it a bit healthier by using wheat?

Meat – You have several options when it comes to meat.  I used frozen breakfast sausage which I defrosted in the microwave.  I also used bacon which I cooked in the oven.  (See my previous post – Cooking Bacon in the Oven).

Eggs – You will need one egg per sandwich.

Cheese – An Egg McMuffin comes with cheese but you can omit it if you want.  I used slices of American cheese but you can use what ever kind you like.  Next time I’m going to try Pepper Jack.   To cut calories, use fat free cheese. 

 

Directions: 

Preheat oven to 350 degree. 

Cook your eggs.  (See my previous post – Cooking Eggs in the Oven – Super Easy).

 

Heat up or cook the meat. 

Slice all the English Muffins in half and place them on a baking sheet.  Place in oven for about 10 minutes to toast the English Muffins.

Take half of a muffin.  Layer the egg, meat and cheese on top and then put the top half of the muffin on. 

 

 

 

If you want to eat these right away, just stick them in the oven for 5 or 10 minutes until they are warmed through and the cheese is melted.  Enjoy!

If you are going to freeze them, wrap them individually in aluminum foil and then place them into a ziplock bag.  

To eat, either defrost overnight or microwave in the morning.  About 1 minute to 1 ½ minutes on high should do it.

Easy Banana Pudding Recipe

 
 
Did you know that November is National Banana Pudding Lovers Month?  I absolutely love banana pudidng so I figured now was the perfect time to make it. 
 
 
 
EASY BANANA PUDDING
 
 
Ingredients
1 (3.4 oz) package instant vanilla pudding
1 (3.4 oz) package instant banana pudding
3 c. milk
1 (14 oz.) can sweetened condensed milk
1 (12 oz.) tub whipped topping
Vanilla wafers
5-6 bananas
 
Directions
Mix 2 pudding mixes, milk and condensed milk together in a large bowl.
 
Fold in 3/4 of the whipped topping.
 
 
Layer vanilla wafers in the bottom of a 13 x 9 inch pan. 
 
Top with a layer of bananas.
 
 
Next add a layer of the pudding mixture. 
 
Repeat layers.
 
Top with remaining whipped topping and crushed vanilla wafers.

Scrambled Eggs in the Oven

If you are cooking for a large crowd then this is the perfect way to make scrambled eggs.  Nice and easy! 

 

Ingredients

1/2 cup butter or margarine, melted

24 eggs

1 teaspoon salt

2 1/2 cups milk

 

Directions

Preheat the oven to 350 degrees F.

Pour melted butter into a glass 9×13 inch baking pan. In a large bowl, whisk together eggs and salt until well blended.  Gradually add milk.  

Pour egg mixture into the baking pan.

Bake uncovered for 30 minutes.  Stir and then bake an additional 10 to 15 minutes, or until eggs are set. Serve immediately.

I just learned this super easy way to make eggs.  This method is great if you are cooking for a crowd.  It also works great if you are making breakfast sandwiches because you get the perfectly round shape.  Here’s how to do it:

1.  Preheat oven to 350 degrees.

2.  Take a muffin tin and lightly spray each spot with non-stick cooking spray. 

3.  Crack an egg into each muffin spot. 

4.  Bake for 15 to 20 minutes. 

5.  Remove from oven. 

 

6.  Remove eggs from muffin tin.

7.  Eat and enjoy!
